About the cheese: the traditional cheese from emmental, as it has been made here from the beginning of time. today, emmentaler is generally produced in wheels of 80 kgs. however, we still make it in the good old-fashioned way. size: almost a meter in circumference, 30 cm high, and weighing 120 kgs—just as our grandparents made them in the old days. this rather extraordinary size has originated in a time when customs were levied at the borders between the cantons. cheese was taxed per loaf, not by weight. that‘s why the ingenious cheese makers from emmental created these enormous specimens nan nan other information: silage-free cow milk • raw milk • hard cheese • 686–1107 m (emmental) • 105 kg • 16–18 months
