before we get down to business, our happy red onions can relax in the herbal salt bath. They are then conflated in red wine-vinegar-sud, retaining their beautiful reddish color.

All of our cheese is shipped with labels that have best before dates. We commit to a minimum best before date of one week from the delivery date. Raclette cheese can be frozen for later use.
