a wee tale
our wish was to create a cheese with herbs. we experimented with textures and sizes, but also with different herbs for the casing. the result was a creamy cheese made from cow's milk shaped like a pyramid. after an extensive hunt through barbara's herb garden, only one particular herb qualified for the casing. the savory herb! Not to be confused with the adjective "savoury", "savory" is a thyme like herb with a spicy and peppery flavour. after the cheese is made and the salt bath is taken, the cheese receives its savory-coat and is ready for maturation. during this process the white mould grows like a second skin over the savory. the name "sari" is derived from the french word "sariette" and means savory.
character
the tartness and texture of the savory gives the creamy soft cheese a unique character. the Mediterranean aroma goes wonderfully with the creamy core of the cheese.
playground
sari is a companion throughout the year, in the cooler seasons it preserves the warmth from the summer months. in the warmer months the fresh herbaceousness protects from melting away.

All of our cheese is shipped with labels that have best before dates. We commit to a minimum best before date of one week from the delivery date. Raclette cheese can be frozen for later use.
