In 1874 the first cheese was made in the Glauser/wynistorf dynasty. The recipe for today's Aettis was lost for 3 generations. In keeping with old values, the youngest generation has now breathed new life into the cheese that was already popular in 1874. It is made by hand and with raw milk – as back then.
